The route to Ignoto 

Felipe Montenegro was born on August 24, 2001 in Quito, Ecuador. Since childhood, his passion for cooking was born by watching his grandmother and father in the kitchen, which awakened his love for flavors, techniques and the art of cooking. This fascination with the stoves, together with a rigorous discipline, has been the key to his professional growth and has taken him to where he is today.

Gastronomic Experience

Throughout his career, Felipe has had the opportunity to work in some of the most prominent restaurants in Quito, Ecuador, such as Zero Lab and 3500, where he refined his technique and culinary vision. His desire to keep learning took him to Spain, where he joined the acclaimed restaurant El Poblet by Quique Dacosta (2 Michelin stars), and later Akelarre by Pedro Subijana, a legendary 3-Michelin-star restaurant, where he deepened his creativity and culinary identity.

 

In 2024, he was awarded third place in the national competition “Talentos Martiko” in San Sebastián, Spain,  an experience that reaffirmed his pursuit of an honest and emotional cuisine.

 

Recently, Felipe expanded his path in Austria, working within the demanding Central European gastronomic scene, gaining new perspectives and challenges.

 

Today, he presents his first signature pop-up project, a concept where his international journey meets his roots. Conceived as an ephemeral work between art and cuisine, Felipe offers a unique and mysterious experience, where each dish is a surprise: a journey of flavors, sensations, and emotions that reflect his evolution as a chef.
