Origin

Felipe Montenegro is an Ecuadorian chef based in Vienna. His formation was shaped in demanding kitchens where precision, timing and discipline are non-negotiable.
Years inside structured environments defined his approach: clarity over noise, control over improvisation, intention over excess.

Ignoto stands on that foundation.

 

It was born from a different way of understanding the table, where discipline remains, but the work moves with its own direction.

Formation
 

Felipe Montenegro trained between Ecuador and Spain, moving from professional kitchens in Quito to Michelin-starred restaurants in Spain.

 

He worked at El Poblet by Quique Dacosta (2 Michelin stars) and later at Akelarre by Pedro Subijana (3 Michelin stars), both internationally recognized for operating at the highest level of contemporary fine dining.

 

In 2024, he received third place at “Talentos Martiko”, a national competition held at the Basque Culinary Center, San Sebastián. 

 

After Spain, he continued working within Michelin-starred environments in Vienna, Austria, further developing his practice within the Central European fine dining landscape.
